Ingredients:
- 10 egg yolks
- 1/2 tbsp salt
- 1.3 cups of sugar
- 1.5 cups of brandy or cognac
- 2 tsp vanilla extract
- Whipped cream (optional)
- Cocoa powder (optional)
Preparation:
- Beat the yolks, salt and sugar until thick.
- Slowly pour in the brandy or cognac, whisking constantly until combined.
- Pour the mixture into a saucepan and heat over low heat, stirring constantly.
- Be patient. The "Advocate" is ready when it's thickened well and hot, but not boiling. Boiling evaporates the alcohol, and you lose some of the flavor and half the enjoyment.
- When the mixture is thick and very hot, remove the saucepan from the heat and stir in the vanilla extract.
- Allow the liqueur to cool, then refrigerate until serving time, pouring into small glasses or espresso cups.
- For traditional serving Top with whipped cream and a little cocoa powder, or serve with just the cream or plain.

Egg liqueur "Advocate" can be stored in the refrigerator for no more than 3 days.
