Hamburgers with bacon patty and barbecue sauce

Ingredients:

  • 450 g ground beef from the sirloin
  • 12 small buns, pre-cut
  • 450 g chopped bacon (pork belly)
  • 1/2 chopped onion
  • 1 tbsp. breadcrumbs
  • 1 cup grated mature cheddar cheese
  • 2 beaten eggs
  • 1/2 cup barbecue sauce and a little more for serving
  • 2 tbsp chopped fresh parsley
  • Coarse salt and freshly ground pepper
  • Special spray for lubrication
  • Salted butter for buns
  • Slices pickled cucumbers, for decoration

Preparation:

  1. Fry the bacon in a skillet over medium heat for 8 minutes, stirring occasionally, until crisp. Remove with a slotted spoon and set aside.

    Reserve one tablespoon of rendered fat in the pan and discard the rest. Add the onion and sauté until tender, about 8 minutes. Let the onion cool.
  2. Preheat oven to 190 degrees Celsius. In a large bowl, combine bacon, onion, ground beef, cheddar cheese, eggs, 2 tablespoons barbecue sauce and parsley, season with salt and pepper, and mix with your hands until smooth.
  3. Take a muffin tin (12 cups), grease it with oil, you can use a special spray.

    Fill each cavity with minced meat, filling it to the very top. Spread 1/2 tablespoon of barbecue sauce on each "muffin." Bake for 12-15 minutes, until cooked through. Let cool in the pan.
  4. Meanwhile, butter the cut buns and toast them cut side down in a skillet over medium heat.

    Make burgers by placing bacon patties on buns and topping with pickles. Serve with the remaining barbecue sauce.
