Ingredients:
- 2 cups grilled pork shoulder, shredded and finely chopped
- 12 slices of mature cheese Cheddar (approximately 170 gr.)
- 4 cups cooked macaroni and cheese, reheated
- 8 slices white bread
- 120 g butter, room temperature
- 6 tablespoons mayonnaise
- 2 medium onions, cut into thin rings
- Coarse salt and freshly ground pepper
- 1 cup barbecue sauce (See barbecue sauce recipes here)
Preparation:
- Mix 85 g of butter with mayonnaise using a mixer.
- Place the macaroni and cheese in a 20cm square baking dish. Cover with plastic wrap and freeze until firm, about 45 minutes.
Cut the pasta into squares slightly smaller than a slice of bread.
- Meanwhile, melt the remaining 2 tablespoons (30 g) butter in a skillet over medium heat. Add the onion and cook, stirring, until the onion is caramelized, about 20 minutes. Season with salt and pepper.
- Mix pork in a saucepan barbecue sauce, and heat over low heat for 5 minutes.
- Spread the mayonnaise mixture generously on the bread slices. Turn the bread over, mayonnaise side down, and top each with one slice of cheddar cheese, then one square of macaroni, and another slice of cheese.
Top with one quarter of pork and caramelized onion, then top with the remaining cheese slices. Place the remaining bread slices on top of the sandwiches, mayonnaise side up.
- Fry sandwiches in a skillet over medium heat, two sandwiches at a time, for 5 minutes per side, until golden brown.
