Preparation:

  1. Pierce the potatoes with a fork and microwave for 8 minutes. Then peel and mash until smooth.
  2. Melt the butter in a shallow frying pan and fry lightly until browned, then add the sage leaves and fry.

    Remove the sage leaves and place on a plate.

    Fry the green onions in the same pan with the sage butter. Season with salt and pepper.
  3. Sprinkle the mashed potatoes with fried green onions and sage.
