Ingredients:
- 250 gr. tortellini pasta
- 1 cup diced smoked salami
- 1 cup grated carrots
- 1 cup frozen or fresh green peas, blanched
- 0.5 cup chopped baked red pepper
- 1/3 cup olive oil
- 2 tablespoons white wine vinegar
- 1 shallot, chopped
Preparation:
- Bring a large pot of salted water to a boil. Add the tortellini and cook according to package directions. Then drain the pasta in a colander and rinse under cold water. Transfer to a bowl.
- Add sausage, carrots, peas and roasted peppers.
- Prepare the dressingIn a bowl, combine the olive oil, white wine vinegar, shallots, 1/2 teaspoon salt, and pepper to taste. Pour the dressing over the pasta salad and toss. Season with salt and pepper to taste and refrigerate for 3 hours.
