Ingredients:
Quesadilla
- 350 g lean ground beef
- 2 tbsp. l. olive oil
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp. garlic granules
- 2 tbsp. ketchup
- 1.25 tbsp. cooked brown rice
- 4 whole wheat tortillas, 20cm each.
- 1 tbsp. grated mozzarella
Fillings to choose from
- 1/2 cup grape tomatoes, halved
- 1 red bell pepper, seeded and cut into thin strips
- Chopped romaine lettuce
- 1/2 cup low-fat yogurt
- Lime wedges
Preparation:
- Heat olive oil in a large nonstick skillet over medium-high heat. Add the ground beef, break it up with a spoon, and cook for about 5 minutes, until almost all the liquid has evaporated.
- Stir in the cumin, chili powder, garlic, 1/2 teaspoon salt, and a couple of grinds of black pepper and cook for 3 minutes. Stir in the ketchup and cook, stirring regularly, for about 2 minutes, until the meat is cooked through and browned. Add the rice and 1/4 cup water and cook for about 3 minutes, until the rice is heated through.
- Preheat oven to 200°C.
Spray a rimmed baking sheet with cooking spray. Place on it. whole grain tortillasDivide the minced meat mixture between the tortillas and sprinkle evenly with mozzarella.
- Bake for 3-5 minutes, until the cheese is melted and the tortillas begin to brown. Transfer the quesadillas to individual plates and serve with toppings.
