Oatmeal with pumpkin

Ingredients:

  • 450 gr. pumpkin puree
  • 2 cups milk, plus extra for serving
  • 0.5 cup dried cranberries or raisins
  • 0.25 cups brown sugar, plus extra for sprinkling
  • 1 tsp pumpkin pie spices (nutmeg, allspice, cloves)
  • 1 teaspoon vanilla extract
  • 2 cups of oatmeal
  • Roasted pumpkin seeds for decoration

Preparation:

  1. Combine pumpkin puree, milk, 2 cups water, dried cranberries, brown sugar, pumpkin pie spice, vanilla, and a large pinch of salt in a medium saucepan.

    Bring to a gentle simmer over medium heat, then add the rolled oats and reduce the heat slightly. Simmer gently, stirring frequently, until the oats are tender and the porridge reaches your desired consistency, 10-15 minutes.
  2. Place the porridge in deep bowls and serve, drizzled with milk and sprinkled with sugar and pumpkin seeds.
