Ingredients:
- 8 beef hot dog sausages
- 8 pieces smoked bacon
- 8 hot dog buns
- 1 diced tomato
- 0.5 cup chopped mango
- 4 chopped onions
- 1 bunch chopped cilantro
- 2 teaspoons apple cider vinegar
- 0.25 tsp garlic powder
- Hot mustard for serving
- 1 tablespoon finely chopped seeded jalapeño pepper
- Crushed potato chips for garnish
Preparation:
- Preheat the grill to medium. Combine the tomato, mango, leek, cilantro (reserving a few tablespoons), jalapeño, vinegar, and garlic powder in a large bowl. Season with salt and pepper and toss. Refrigerate until serving.
- Wrap each sausage with a piece of bacon. Grill, turning, until the bacon is crispy, about 5 minutes. Spread mustard on the buns and place the sausages inside. Garnish with mango salsa, chips, and the remaining cilantro.
