Ingredients:
- 4 slices of bacon
- 1 tbsp. grated cheese Cheddar or marble cheese
- 1 cup of kefir
- 2 tsp baking powder
- 1/4 teaspoon of baking soda
- 1 teaspoon coarse salt
- 1 tbsp. l. finely chopped chives
- 2 cups flour, plus a little extra for dusting
- 6 tablespoons cold butter, diced, plus extra melted for greasing
Preparation:
- Preheat oven to 220°C. Grease a baking sheet with butter.
- Fry the bacon in a shallow frying pan over medium heat until crisp. Drain on paper towels to absorb excess fat, then chop the bacon into small cubes. Reserve 2 tablespoons of the rendered fat for the batter.
- In a food processor, combine the flour, baking powder, baking soda, salt, chopped bacon, and chopped chives. Add the butter and process until the mixture resembles peas.
Stir in the cheese, add kefir and melted fat, mix until the dough becomes loose.
- Place the dough on a lightly floured surface. Form the dough into a ball and knead 3-5 times, pressing with the palm of your hand (do not knead the dough for too long, otherwise the cookies will be tough).
Roll the dough into a round layer about 1.5 cm thick, then press out cookies with a floured glass, 5 cm in diameter.
Re-roll the remaining dough and press out the cookies.
- Place the cookies on the prepared baking sheet and brush the top with melted butter.
Bake the cheese and bacon cookies until golden brown, 12 to 15 minutes. Serve warm.
