Hawaiian BBQ Pizza

Ingredients:

  • 450 ready-made pizza dough at room temperature
  • 1 cup (about 110 g) grated pepper jack cheese (a semi-hard cow's milk cheese with chili pepper)
  • 1/2 cup (about 55g) grated Munster cheese (a semi-soft cow's milk cheese)
  • 110 g of ham slices, cut into large pieces
  • 1 tomato, diced
  • 2 tbsp. extra virgin olive oil
  • 1/2 pineapple, peeled, cored and cut into rings
  • 1 bunch green onions, finely chop the green parts
  • 1/4 cup barbecue sauce

Preparation:

  1. Place an inverted baking sheet or pizza stone in the oven and preheat to 450°F (245°C). Cover another inverted baking sheet with parchment paper. Brush the pizza dough with olive oil and place it in the center of the parchment paper. Cover it with another sheet of parchment and set aside.
  2. Preheat a grill pan over medium-high heat. Grill the pineapple rings for 4 minutes on each side, until charred. Transfer them to a plate. Grill the white parts of the green onions for about 4 minutes, until lightly charred. Place them on the plate with the pineapples.
  3. In a small bowl, combine the barbecue sauce and tomato. Roll out the pizza dough on parchment paper to a 25 x 35 cm (10 x 14 in) square and spread the tomatoes and barbecue sauce on top. Sprinkle with pepper jack and Muenster cheese, then top with grilled pineapple, ham, and the white and green parts of the scallions.
  4. Transfer the pizza, parchment included, to a hot baking sheet or pizza stone. Bake for 15 minutes, until the cheese is bubbling and the crust is golden brown. Remove the pizza to a cutting board and cut into slices.
