Baked Banana Pudding

Ingredients:

  • 4 large eggs
  • 3/4 cup sugar
  • 3 tbsp. flour
  • 0.5 tsp and a pinch of salt
  • 2 cups whole milk
  • 0.5 tsp vanilla extract
  • 30-40 vanilla wafer cookies
  • 3-4 medium ripe bananas

Preparation:

  1. Take 3 eggs and separate the whites from the yolks; set the whites aside. Add the remaining whole egg to the yolks.

    In a saucepan, combine 0.5 cups of sugar, flour, and 0.5 teaspoon of salt. Stir in the whole egg and 3 egg yolks, then whisk in the milk. Cook, uncovered, stirring frequently, for about 10 minutes, until the mixture thickens. Remove from heat and stir in the vanilla extract.
  2. Preheat oven to 220°C.
  3. Spread the pudding in a thin layer in a 1.5-quart baking dish. Top the pudding with a layer of wafer cookiesSlice the bananas crosswise into thin slices, approximately 3 mm thick, and arrange them in a layer on top of the cookies. Next, spread one-third of the remaining pudding over the top and continue alternating layers of cookies, bananas, and pudding, ending with a layer of pudding.
  4. To make meringueBeat the reserved egg whites with a pinch of salt until stiff. Gradually fold in the remaining 1/4 cup sugar and continue beating until the whites no longer slide out of the bowl when tilted.
  5. Using a spatula, spread the meringue over the pudding, make a few decorative swirls on top, and bake until light brown, 5 minutes.
