Onion rings in the oven topcook.tomathouse.com
Ingredients:
- 1 - 2 large onions, peeled
- 4 cups baked potato chips
- 0.5 tsp cayenne pepper
- 1 cup of low-fat yogurt or kefir
- 0.5 cups and 2 tablespoons of flour
- 0.5 tsp salt
- 1/4 tsp ground black pepper
Preparation:
- Preheat oven to 220°C.
- Lightly spray a baking sheet with olive oil. Place the potato chips in the bowl of a food processor and pulse for 20 seconds until crumbly. Transfer to a shallow bowl and sprinkle with cayenne pepper. In another bowl, combine sour milk, 2 tbsp. flour, salt and pepper.
Slice the onion into 1.5 cm wide rings and separate them, leaving only the larger ones. You should have approximately 12 to 14 rings.
- Place the remaining flour in a zip-lock bag, add the onion rings, and shake well to coat them. Dip the onion rings one at a time into the liquid mixture, then roll them in the chips and place them on a baking sheet.
- Drizzle evenly with canola oil and bake for 20 minutes or until crispy. Season the finished rings with salt and serve immediately.
