Onion rings in the oven

Ingredients:

  • 1 - 2 large onions, peeled
  • 4 cups baked potato chips
  • 0.5 tsp cayenne pepper
  • 1 cup of low-fat yogurt or kefir
  • 0.5 cups and 2 tablespoons of flour
  • 0.5 tsp salt
  • 1/4 tsp ground black pepper

Preparation:

  1. Preheat oven to 220°C.
  2. Lightly spray a baking sheet with olive oil. Place the potato chips in the bowl of a food processor and pulse for 20 seconds until crumbly. Transfer to a shallow bowl and sprinkle with cayenne pepper. In another bowl, combine sour milk, 2 tbsp. flour, salt and pepper.

    Slice the onion into 1.5 cm wide rings and separate them, leaving only the larger ones. You should have approximately 12 to 14 rings.
  3. Place the remaining flour in a zip-lock bag, add the onion rings, and shake well to coat them. Dip the onion rings one at a time into the liquid mixture, then roll them in the chips and place them on a baking sheet.
  4. Drizzle evenly with canola oil and bake for 20 minutes or until crispy. Season the finished rings with salt and serve immediately.
