Inside-out burger with tomato-Worcestershire ketchup topcook.tomathouse.com
Ingredients:
Hamburger
- 100 g chopped bacon
- 0.5 cup chopped red onion
- 3 tablespoons raw chorizo sausage, casing removed
- 900 g of ground beef, 20% fat
- 200 g Swiss cheese, thinly sliced, about 8 slices
- 4 Kaiser rolls, cut in half and fried
Ketchup
- 3 tbsp. l. olive oil
- 1/4 cup diced red onion
- 8 plum tomatoes, peeled, seeded and cut into 0.5cm pieces.
- 1 tbsp chopped garlic
- 2 tablespoons Worcestershire sauce
- 1 tbsp. apple cider vinegar
- 2 tablespoons of sugar
- 0.5 tsp chopped dill
- A pinch of allspice
- A pinch of celery salt
- A pinch of mustard seeds
Preparation:
- In a medium skillet over medium-high heat, fry the bacon and onion. The bacon should release its fat but not become crispy. Add the chorizo and fry until cooked through. Then transfer the bacon and chorizo mixture to paper towels and let cool.
- Divide the ground beef into 8 equal portions. Roll into loose balls and form into 10 cm diameter patties. Layer 1 piece of cheese, 1/4 of the bacon mixture, and another piece of cheese in the center of each patty. Top with another patty, and gently press the edges of the 2 patties together. Repeat with the remaining patties to make a total of 4 large patties, each 10 cm in diameter and 4 cm thick.
- Heat a medium frying pan over medium heat. Place 4 patties in the pan and cook for 3-4 minutes on each side. Then carefully flip and cook for another 3-4 minutes on the other side. Remove the pan from the heat, cover with a lid, and bake in the oven at 120°C for 10 minutes.
- Remove the patties from the oven, place them on buns and serve with tomato-Worcestershire ketchup.
This dish will be complemented by the bouquet of red Merlot wine.
Ketchup Heat oil in a medium saucepan over medium heat and add the onion. Saute until caramelized. Add the tomatoes and garlic and cook for a few more minutes until the vegetables soften. Then add all the remaining ingredients and simmer for 30 minutes. You can serve the ketchup with pieces of vegetables or blend it until smooth.
