Ingredients:
Dry marinade for rubbing
- 1 trimmed beef brisket with at least 1/4 inch of fat remaining (about 4 to 6 lbs.)
- 1/2 cup ground ancho pepper
- 2 tbsp paprika
- 1 tbsp. ground cumin
- 1 tbsp mustard powder
- 1 tbsp coarse salt
- 2 tsp cayenne pepper
Dark Beer BBQ Sauce
- 1 large red onion
- 4 cloves of garlic
- 2 serrano peppers, chopped
- 4 bottles of dark beer
- 1/4 cup brown sugar
- 2 bay leaves
Preparation:
- Combine the spices in a small bowl. Rub them all over the brisket, place it on a baking sheet, cover, and refrigerate for at least 1 hour or up to 6 hours.
- Prepare the smoker according to the manufacturer's instructions. Place the brisket, fat side down, in the smoker and cook for 4-5 hours, or until tender. Baste with the sauce every 30 minutes.

Dark Beer BBQ Sauce Place all ingredients in a small saucepan, season with salt and pepper, and simmer over medium heat for 15 minutes. Remove from heat and let cool slightly.
