Smoked beef brisket with beer barbecue sauce

Ingredients:

    Dry marinade for rubbing

  • 1 trimmed beef brisket with at least 1/4 inch of fat remaining (about 4 to 6 lbs.)
  • 1/2 cup ground ancho pepper
  • 2 tbsp paprika
  • 1 tbsp. ground cumin
  • 1 tbsp mustard powder
  • 1 tbsp coarse salt
  • 2 tsp cayenne pepper

    Dark Beer BBQ Sauce

  • 1 large red onion
  • 4 cloves of garlic
  • 2 serrano peppers, chopped
  • 4 bottles of dark beer
  • 1/4 cup brown sugar
  • 2 bay leaves

Preparation:

  1. Combine the spices in a small bowl. Rub them all over the brisket, place it on a baking sheet, cover, and refrigerate for at least 1 hour or up to 6 hours.
  2. Prepare the smoker according to the manufacturer's instructions. Place the brisket, fat side down, in the smoker and cook for 4-5 hours, or until tender. Baste with the sauce every 30 minutes.

    Dark Beer BBQ Sauce


    Place all ingredients in a small saucepan, season with salt and pepper, and simmer over medium heat for 15 minutes. Remove from heat and let cool slightly.
