Ingredients:
Marinade
- One chicken, cut into 10 pieces and patted dry with paper towels, weighing 1.8 kg.
- 1/2 cup squeezed orange juice
- 1/4 cup olive oil
- 1/4 cup hot sauce
- 1/4 cup Dijon mustard
- 1 tbsp. l. grated orange zest
Glaze
- 55 g butter
- 1/4 cup honey
- 1/4 cup squeezed orange juice
- 1/4 cup barbecue sauce
- 1 tbsp. l. grated orange zest
- 2 tablespoons Dijon mustard
- 1/4 tsp ground allspice
Preparation:
- Mix orange juice, olive oil, hot sauce, mustard, and orange zest in a large bowl. Add the chicken and stir.
Cover with cling film and marinate in the refrigerator for at least 1 hour or overnight.
- Preheat the grill to medium heat. Remove the chicken and let it come to room temperature.
- Remove the chicken from the marinade and pat dry. Grill for 5 minutes on each side, then reduce the heat and close the grill lid. Continue cooking the chicken for 25 minutes, or until cooked through.
- Prepare the glazeWhile the meat is grilling, melt the butter in a small saucepan over a grill. Add the honey, orange juice, barbecue sauce, zest, mustard, and allspice and whisk to combine. Pour some of the glaze into a small bowl to serve with the meat.
- Brush the chicken pieces with glaze, then turn them over, glaze-side down, and cook for 2 minutes. Brush the top of the chicken with glaze and turn again. Continue cooking for another 3 minutes. Transfer the chicken from the grill to a platter and serve with the glaze in a bowl.
