Kale Soup topcook.tomathouse.com
Ingredients:
- 2 tbsp. l. olive oil
- 450 g fresh chorizo sausages
- 4 potatoes, diced
- 1 medium onion, finely chopped
- 2 cloves garlic, finely chopped
- 8 cups chicken broth
- 450 g kale leaves, stems removed, torn into 2.5 cm pieces
- 1/2 tbsp. grated parmesan
Preparation:
- Heat olive oil in a large stockpot over medium heat. Sauté the chorizo in the oil for 5-7 minutes. Add the potatoes, onion, garlic, and chicken broth.
- Simmer for 20-25 minutes, until the potatoes are tender enough to pierce with a fork. Reduce heat to low, add the kale, and cover. Cook for 7-10 minutes, until the kale wilts.
- Remove the lid, add the Parmesan cheese, and cook for another 5 minutes. Season to your desired taste with salt and pepper.
