Light salad of fresh beets and orange with cheese

Preparation:

In a bowl, combine 2 tablespoons orange juice, 2 teaspoons sherry vinegar, and 1 teaspoon mustard; whisk the dressing with 2 tablespoons olive oil and season with salt and pepper. Thinly slice 700 g (16 oz) peeled raw beetroot. Toss with the dressing, the segments of 2 oranges, 2 cups fresh parsley, and 1/2 cup mint. Garnish with chopped almonds and goat cheese.
