Ingredients:
Plum filling
- 1.3 kg plums, cut into quarters
- 1/4 cup cornstarch
- 2/3 cup sugar
- A pinch of fine salt
Shortcrust pastry
- 1 and 1/4 cups premium flour
- 3 tbsp. granulated sugar
- 1 teaspoon baking powder
- A pinch of fine salt
- 4 tbsp (60 g) butter, cut into small pieces
- 3/4 cup drinking cream with 10% fat content
- Powdered sugar and vanilla ice cream for serving
Preparation:
- For the fillingCombine cornstarch and 1/4 cup water in a slow cooker. Add plums, sugar, and salt and stir until smooth.
- For the testWhisk the flour, sugar, baking powder, and salt in a large bowl. Add the butter and mix with your hands until the mixture forms pea-sized pieces of flour. Add the milk and cream mixture and mix with a wooden spoon until a moist dough forms.
- Spread the batter over the plums. Close the slow cooker and cook on high heat for 3-4 hours, until the cobbler is bubbling and the cookies are set.
- Let the cobbler cool for 20 minutes. Divide the cobbler among servings, then dust with powdered sugar and garnish with vanilla ice cream.
