Pork bone-in steak with baked apples

Ingredients:

  • 4 T-bone pork steaks (1.2 cm thick, about 680 g total)
  • 2 medium parsnips, peeled and cut into 1.2cm pieces.
  • 1 medium turnip, peeled and cut into 1.2cm pieces.
  • 1 red onion, cut into 1.2 cm pieces.
  • 2 tbsp. l. olive oil
  • 1 tbsp chopped fresh rosemary
  • 2 small apples (such as Gala), halved and cores removed
  • 1/4 cup apricot jam
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon freshly chopped sage
  • 1 tbsp (15 g) butter

Preparation:

  1. Preheat oven to 230°C. Toss parsnips, turnips, and onions on a baking sheet with olive oil, rosemary, 1/2 teaspoon salt, and a couple of grinds of pepper.

    Arrange the apples on top, cut side up. Spread with 2 tablespoons of apricot jam and season with pepper.

    Bake until the vegetables and apples are tender, 20 minutes. Reduce the oven temperature to high and bake the vegetables until golden brown, 5 minutes.
  2. Meanwhile, in a large bowl, combine the remaining 2 tablespoons jam, 1/2 cup water, Worcestershire sauce, and sage. Season with pepper. Pierce the pork all over with a fork and add to the bowl. Marinate for 10 minutes.
  3. Remove the steaks from the marinade (don't discard the sauce). Place them on a wire rack on a baking sheet and season with salt and pepper. Bake over high heat until done, 4-5 minutes.

    Transfer the marinade to a saucepan and simmer over medium heat for 3 minutes until thickened. Whisk in the butter. Drizzle the pork with the sauce and serve with vegetables and apples.
