Ingredients:
Jerk Marinade:
- 4 skinless, boneless chicken breasts
- 1 bunch of chopped green onions
- 3 large cloves of garlic, chopped
- 1 chopped habanero chili pepper
- Juice of 1 lime
- 3 tbsp. l. olive oil
- 2 tablespoons soy sauce
- 1 tbsp. l. brown sugar
- 2 tsp ground allspice
- 1 teaspoon chopped fresh thyme leaves
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Salt and ground black pepper
Preparation:
- Blend all marinade ingredients in a food processor until smooth.
Place the chicken in a 33x23 cm baking dish and season with salt and pepper to taste. Pour the jerk marinade over the meat and toss to coat. Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow the meat to marinate. If you have time, it's best to marinate overnight.
- Preheat the grill to medium-high. Lightly oil the grates to prevent the chicken and marinade from sticking. Remove the chicken from the marinade, let any excess drip off, and place it on the grill.
Close the grill and sear the chicken until cooked through, about 5 minutes per side (the jerk marinade should be black and caramelized where it touches the grill). Transfer the chicken to a serving platter and serve.
