Chicken Breasts with Jalapeño Mango Sauce topcook.tomathouse.com
Ingredients:
- 2 boneless, skinless chicken breasts (about 12 oz each)
- 1 mango, diced (about 1.5 cups)
- 2-3 crushed jalapeño peppers
- 2 tbsp. l. olive oil
- 1 onion, diced (about 1 cup)
- 1 red pepper, diced (about 1 cup)
- 3 coarsely chopped cloves of garlic
- 1 teaspoon of salt
- Freshly ground black pepper
- 1/2 tsp ground allspice
- 1/3 cup red wine vinegar
- 3 tbsp. molasses
- 2 tablespoons Worcestershire sauce
- 2 tablespoons lime juice
- 1/4 cup tomato sauce
Preparation:
- Heat oil in a medium skillet over medium-high heat. Add the onion and cook until translucent, about 2 minutes. Add the red pepper, garlic, salt, black pepper, and allspice and cook for another 2 minutes.
Stir in the wine vinegar, molasses, Worcestershire sauce, lime juice, and tomato sauce and cook for another minute. Transfer the mixture to a blender, add the mango and jalapeño. Blend until smooth.
Add a cup of barbecue sauce to the chicken in a sealed plastic bag and marinate for an hour.
- Preheat the grill. Place the chicken under the grill and discard the marinade. Grill the chicken over high heat for about 12 minutes, turning once. Let the chicken rest for 10 minutes, then shred. Spoon about 1/2 cup of barbecue sauce over the chicken pieces and serve.
