Seattle-Style Beef Ribs with BBQ Sauce topcook.tomathouse.com
Ingredients:
- 1 beef rib (about 1.3 kg total), cut in half
- 1 tsp. seasoned salts
- 1 cup vegetable broth
- 1 cup of apple juice
- 2 tablespoons apple cider vinegar
- 2 tbsp. ready barbecue sauce
- 1 teaspoon molasses
- 1 tsp instant espresso or 2 tbsp strong brewed coffee
- Sliced green apple for garnish
Preparation:
- Place the ribs in a large, heavy pot. Add seasoned salt, vegetable broth, and apple juice, plus enough water to cover the ribs, and bring to a boil.
Reduce heat to medium-low and simmer until tender, about 1 hour. Remove the ribs from the pan with tongs. Cool slightly. Cut between the bones into portions. (This can be done up to 1 day in advance. Cover and refrigerate.)
- Preheat grill to medium heat.
In a medium bowl, combine the barbecue sauce, apple cider vinegar, molasses, and coffee. Brush the ribs with the sauce. Grill until golden brown and a thick glaze forms, turning occasionally and basting with the sauce, about 10 minutes total. Garnish with green apples.
Advice: You can cook the ribs in a slow cooker at low temperature for 4 hours instead of boiling them.
