Meat muffins with vegetables

Ingredients:

    Meat muffins

  • 1 cup crumbled butter crackers
  • 1 cup oatmeal
  • 425 g ground beef
  • 425 g of ground pork
  • 2/3 cup diced onion
  • 2/3 cup whole milk
  • 0.5 cup chopped fresh parsley
  • 0.5 cup diced celery stalk
  • 1/3 cup ketchup
  • 1/4 cup diced green bell pepper
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon of salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1 tsp. yellow mustard
  • 0.5 tsp dried marjoram
  • 0.5 tsp dried thyme
  • 0.5 tsp seasoned salt
  • 2 eggs, lightly beaten

    Mashed potato topping

  • 900 g of potatoes
  • 2 tbsp. milk
  • 2 tbsp sour cream
  • 60 g softened unsalted butter
  • Freshly ground black pepper
  • Your favorite gravy, for serving

Preparation:

  1. Preheat oven to 350°F (175°C). Spray a muffin tin with cooking spray.
  2. Meatloaf:

    In a medium bowl, combine crushed crackers, oats, and milk. In a large bowl, combine ground beef, ground pork, onion, parsley, celery, ketchup, green pepper, Worcestershire sauce, salt, black pepper, paprika, mustard, marjoram, thyme, seasoning salt, and eggs. Add the oat mixture and mix well, but do not pack the ground beef down.
  3. Divide the meat mixture into eight 8-ounce (220-gram) portions and place them in the prepared muffin tin. Smooth the tops of each portion. Bake until the internal temperature of the meatloaf reaches 165°F (74°C), about 30 minutes. Remove the meatloaf from the muffin tins to paper towels to drain any excess liquid. Meatloaf can also be made in a loaf tin.
  4. Mashed potatoes:

    Peel the potatoes and cut into 2.5 cm (1 in) pieces. Place them in a saucepan, cover with cold water, add salt, and bring to a boil. Cook until the potatoes are tender, 15-20 minutes. Drain thoroughly. Place the potatoes, milk, sour cream, and butter in a bowl and mash until smooth. Season with salt and pepper to taste. Scoop the mashed potatoes over the meatloaf cupcakes with an ice cream scoop. Serve with gravy.
