Microwave Spiced Spaghetti Squash

Ingredients:

  • 1 medium spaghetti squash (about 4 kg)
  • 1 tbsp olive oil or butter
  • 2 tsp finely grated ginger
  • 1 tsp. garam masala seasoning mixtures
  • 2 tablespoons lemon juice
  • 4 teaspoons of honey
  • 1/4 teaspoon coarse salt, plus a little more for seasoning
  • 0.5 cup coarsely chopped cilantro

Preparation:

  1. Cut the pumpkin in half and remove the seeds. Place it cut-side down in a microwave-safe bowl (the cut parts of the pumpkin can touch each other) and add 1 cup of water.

    Cover with plastic wrap and microwave until tender and a knife can easily pierce the skin, 15 to 18 minutes. Let it rest for a moment. Remove the wrap and let it cool to room temperature until it's comfortable to handle.
  2. Meanwhile, heat the oil in a small non-stick frying pan. Add the ginger and seasoning. garam masalaAdd lemon juice and honey. Season with salt. The sauce should be sweet and tart.
  3. Using a fork, scrape the squash flesh into a bowl to form long, spaghetti-like strands. Pour the sauce over it and sprinkle with cilantro. Season with salt to taste.
