Fried tofu in lettuce leaves

Ingredients:

  • 1 package of firm tofu (340 - 400 g)
  • 2 teaspoons peanut butter
  • 1/4 tsp chili powder, or to taste
  • 3 green onions, thinly sliced
  • 2 fresh ears of corn, kernels removed
  • 1/4 cup soy sauce
  • 1 teaspoon balsamic vinegar
  • 6 large inner romaine lettuce leaves (from the core)
  • 2 avocados, thinly sliced

Preparation:

  1. Heat the peanut oil in a nonstick skillet over medium-high heat. Add the tofu and break it up into very small pieces. Cook for a few minutes, until most of the liquid has evaporated and the tofu begins to brown.
  2. Add chili powder, a little salt and black pepper, and stir. Add the green onions and corn and cook for a few minutes (the corn may remain crispy). Add the soy sauce and cook until most of the liquid is absorbed. Turn off the heat and stir in the balsamic vinegar.
  3. Spread the mixture among lettuce leaves, add avocado slices, fold the leaves, and enjoy!
