American-style pork ribs on the grill topcook.tomathouse.com
Ingredients:
Pork
- 2 slices of pork loin ribs (2 kg)
- 2 tablespoons light brown sugar
- 1 tbsp mustard powder
- 1 tbsp paprika
- 1 teaspoon smoked paprika
- 1 teaspoon ground black pepper
- 1 teaspoon garlic salt
Barbecue sauce
- 1 tbsp. l. rapeseed oil
- 2 tbsp finely chopped onion
- 2 tbsp. apple cider vinegar
- 1.5 cups ketchup
- 3/4 cup light brown sugar
- 3 tablespoons Dijon mustard
- 1 tbsp Worcestershire sauce
- 2 tsp chili powder
- 1 teaspoon cayenne pepper
Preparation:
- Preheat oven to 175°C.
- In a small bowl, combine brown sugar, mustard, paprika, smoked paprika, black pepper, and garlic salt. Be sure to break up any lumps with your fingers. Set aside 1 tablespoon of the mixture for serving.
- Remove the membrane from the underside of the ribs by sliding your fingers under the thin membrane and pulling it off. Repeat with the second layer. Rub the ribs on both sides with the spice mixture. Arrange in a single layer in a large roasting pan and cover tightly with foil. Place the roasting pan in the oven and roast until the ribs are tender, about 1 hour and 15 minutes.
- Preheat grill to medium heat.
- Grill the ribs on each side, turning as needed, for a total of 30 minutes. Brush with barbecue sauce 10 minutes before the end of cooking (use the sauce only at the very end, as it contains sugar that can burn).
- Let the ribs rest for 5 minutes, then slice. Sprinkle the sliced ribs with the reserved dry rub and serve with barbecue sauce.
Barbecue sauce:
In a medium saucepan, heat the vegetable oil over medium-high heat. Add the onion and cook, stirring, until softened. Add the vinegar, ketchup, brown sugar, mustard, and Worcestershire sauce to the pan. chili powder, a little salt and black pepper and cook over medium heat until thickened, about 35 minutes. Exit: about 4 tbsp.
