Shrimp Ramen in Foil

Ingredients:

  • 2 packs of instant noodles
  • 0.5 cups dried mushrooms, chopped
  • 20 large raw shrimp, peeled and deveined
  • 0.5 cup finely chopped onion
  • 0.5 cup chopped green onions
  • 0.5 tsp red pepper flakes
  • 0.5 tsp coarse salt
  • 1 l. vegetable broth
  • 0.5 cup mirin
  • 1/4 cup soy sauce
  • 4 tsp. sesame oil
  • Additional device: 4 sheets of aluminum foil, 45 cm long.

Preparation:

  1. Preheat oven to 200°C.
  2. Divide the noodles into 4 portions and arrange them evenly in the center of each of 4 sheets of aluminum foil. Arrange the mushrooms, shrimp, onions, green onions, red pepper, and salt on top of the noodles in the following order. Fold the sides and corners of the foil up to form a small basket, leaving an opening at the top for pouring in the liquid.
  3. In a small bowl, combine the vegetable broth, mirin, soy sauce, and sesame oil. Spread the liquid evenly among the parcels. Press the foil together, leaving a small opening for steam to escape. Place on a baking sheet and bake in the oven for 15 minutes. Serve immediately.
