Grilled rack of lamb in a gorgonzola crust topcook.tomathouse.com
Ingredients:
- 1/4 cup olive oil
- 1 tbsp freshly ground black pepper + extra for breading
- 1 tbsp sea salt
- 2 tablespoons fresh oregano leaves, chopped
- 2 racks of lamb ribs, trimmed at the ends of the bones
- 3/4 cup crumbled gorgonzola
- 0.5 tbsp. Italian breadcrumbs
- 2 tablespoons of crushed garlic
- 1 tbsp fresh coriander leaves, chopped
Preparation:
- Preheat grill to medium heat.
- In a medium bowl, combine olive oil, black pepper, salt, and oregano. Cut the ribs into individual bone-in patties and place them in the oil mixture. Toss to coat well.
- In a separate bowl, combine the cheese, breadcrumbs, garlic, cilantro, and a pinch of black pepper. Mix gently.
- Remove the ribs from the marinade and place them on the grill. Grill for 1.5-2 minutes. Flip and top each patty with 1 tablespoon of the breadcrumb-cheese mixture. Close the grill lid and grill until desired doneness, about 2-4 minutes. Transfer to a platter and serve.
