Quick buns

Ingredients:

  • 3 packets (7 g each) of active dry yeast
  • 1 and 3/4 cups warm water
  • 0.5 cups honey
  • 0.5 cup melted butter + extra for greasing the dough
  • 2 tsp salt + extra for sprinkling
  • 2 large eggs, beaten
  • 4-6 cups flour + more as needed

Preparation:

  1. Preheat oven to 200°C.

    In the bowl of a stand mixer fitted with a paddle attachment, combine the yeast and warm water. Let sit for 5 minutes, until the yeast is activated and foamy. Stir in the honey.
  2. With the mixer on low speed, add 0.5 cups of melted butter, 2 teaspoons of salt, and the eggs. Slowly add the flour one cup at a time and mix until completely incorporated and the dough pulls away from the sides of the bowl. Add more flour if the dough is too sticky.
  3. Divide the dough into 24 equal portions. Form the buns into the desired shape and place them in a cast iron skillet or on a baking sheet, evenly spaced. Set aside for about 20 minutes to allow the dough to rise until doubled in size. Brush the buns with melted butter.
  4. Bake for 25 minutes, until the tops of the buns are golden brown. Remove from the oven, brush with melted butter, and sprinkle with a little salt.
