Ingredients:
- 2/3 cup low-fat cottage cheese (1%)
- 1 tbsp. apple cider vinegar
- 0.5 tsp dried thyme
- 1 can (440g) white beans, rinsed
- 2 teaspoons olive oil
- A pinch of smoked or sweet paprika
- Chopped chives for serving
Preparation:
- Combine the cottage cheese, vinegar, thyme, beans, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a food processor. Process until smooth, scraping down the sides of the bowl as needed. Refrigerate for 30 minutes to 1 hour.
- Transfer to a serving bowl and drizzle with olive oil, sprinkle with paprika and garnish with chives.
