Ingredients:
Salad
- 4 cups thinly sliced endive (place in cold water to prevent oxidation)
- 0.5 cup peeled green apples, cut into thin strips
- 0.5 cup crumbled blue cheese
- 0.5 cup thinly sliced red onion
- 1/4 cup toasted walnuts
- 2 tablespoons fresh tarragon leaves
- 1/4 tbsp. soy-sherry dressing, see recipe below
Soy-sherry dressing
- 0.5 cups sherry vinegar
- 1/4 cup soy sauce
- 1 tbsp Dijon mustard
- 0.5 tsp chopped shallots
- 1 egg yolk
- 1 tbsp. grape seed oil
Preparation:
- In a medium bowl, combine the endive, apples, blue cheese, onion, walnuts, and tarragon. Add the soy-sherry dressing (adjust the amount to taste), and season with salt and pepper.
- Soy-sherry dressingIn a blender, combine the sherry vinegar, soy sauce, Dijon mustard, shallot, and egg yolk. While blending, pour in the grapeseed oil. Season with pepper (the salt from the soy sauce will be enough to season the dressing).
