Pizzelle wafer cookies

Ingredients:

  • 3/4 cup sugar
  • 0.5 cup melted butter
  • 2 tbsp. milk
  • 1 tsp vanilla extract
  • 0.5 tsp anise extract, optional
  • 3 large eggs
  • 1 and 2/3 cups flour
  • 1.5 tsp baking powder
  • 1/4 teaspoon coarse salt
  • Special equipment: waffle iron for pizzelle

Preparation:

  1. In a large bowl, whisk together the sugar, butter, milk, vanilla, anise extract (if using), and eggs. Add the flour, baking powder, and salt and continue whisking until the dough is smooth. Let it sit at room temperature for at least 1 hour to allow the dough to rest and absorb the liquid.
  2. Heat the waffle iron and bake the pizzelle according to the manufacturer's instructions.
