Sweet mashed potatoes topcook.tomathouse.com
Ingredients:
- 0.5 kg potatoes (about 3 tubers)
- 0.5 kg sweet potato (about 2 tubers)
- 6 tbsp (90 g) butter, diced
- 1/3 cup heavy cream, warm
- 1/3 cup sour cream
- 1 tbsp. l. brown sugar
- A pinch of cayenne pepper
Preparation:
- Place the potatoes and sweet potatoes in a large saucepan and cover with cold water to a depth of 1 inch (2.5 cm). Add a large pinch of salt, bring to a boil, and simmer until the potatoes are easily pierced with a knife, 35-40 minutes. Drain and let cool slightly. Peel the potatoes and place them in a medium bowl. Peel the sweet potatoes and place them in another bowl.
- Divide the butter evenly between two bowls. Add the heavy cream and sour cream to the bowl with the potatoes and mash well with a masher; season with salt and pepper. Add the brown sugar and cayenne pepper to the bowl with the sweet potatoes and mash well; season with salt and pepper.
- Spoon the potatoes and sweet potatoes onto a warmed serving platter and swirl them together with a large spoon. The mashed potatoes can be made up to 2 hours in advance: place them in a baking dish and set aside. Reheat, covered, in the oven at 175°C for 15-20 minutes.
