How to make classic tiramisu topcook.tomathouse.com
Ingredients:
- *6 egg yolks
- 3 tablespoons of sugar
- 450 gr. mascarpone cheese
- 1.5 cups strong espresso, cooled
- 2 tsp dark rum
- 24 store-bought savoiardi biscuits
- 0.5 cup dark chocolate shavings, for decoration
Preparation:
- In a large bowl, using a mixer fitted with a whisk attachment, beat the egg yolks and sugar until thick and pale, about 5 minutes. Add the mascarpone cheese and beat until smooth. Add 1 tablespoon of espresso and mix thoroughly.
- Pour the remaining espresso and rum into a small, shallow dish. Dip each Savoiardi cookie into the coffee mixture for 5 seconds. Soaking the cookies longer will cause them to fall apart.
- Place the soaked cookies in the bottom of a 22 x 32 cm baking pan, breaking the sticks in half if necessary to cover the entire bottom.
- Spread half of the mascarpone mixture evenly over the cookies.
- Then lay out another layer of soaked savoiardi sticks and cover with the remaining mascarpone mixture.
- Cover the tiramisu with plastic wrap and refrigerate for at least 2 hours, or up to 8 hours.
- Sprinkle the dessert with chocolate shavings before serving.
