How to make classic tiramisu

Ingredients:

  • *6 egg yolks
  • 3 tablespoons of sugar
  • 450 gr. mascarpone cheese
  • 1.5 cups strong espresso, cooled
  • 2 tsp dark rum
  • 24 store-bought savoiardi biscuits
  • 0.5 cup dark chocolate shavings, for decoration

Preparation:

  1. In a large bowl, using a mixer fitted with a whisk attachment, beat the egg yolks and sugar until thick and pale, about 5 minutes. Add the mascarpone cheese and beat until smooth. Add 1 tablespoon of espresso and mix thoroughly.
  2. Pour the remaining espresso and rum into a small, shallow dish. Dip each Savoiardi cookie into the coffee mixture for 5 seconds. Soaking the cookies longer will cause them to fall apart.
  3. Place the soaked cookies in the bottom of a 22 x 32 cm baking pan, breaking the sticks in half if necessary to cover the entire bottom.
  4. Spread half of the mascarpone mixture evenly over the cookies.
  5. Then lay out another layer of soaked savoiardi sticks and cover with the remaining mascarpone mixture.
  6. Cover the tiramisu with plastic wrap and refrigerate for at least 2 hours, or up to 8 hours.
  7. Sprinkle the dessert with chocolate shavings before serving.
