Rice with pecans

Ingredients:

  • 1 slice of bacon, cut into pieces
  • 1/2 small onion, finely chopped
  • 1.5 tbsp. basmati rice
  • 1 cup chicken broth
  • 1 1/4 cups water
  • Salt and freshly ground pepper
  • 1/3 cup chopped toasted pecans

Preparation:

  1. Fry the bacon in a skillet with a little vegetable oil until crisp. Add the onion and cook until softened. Add the basmati rice and cook for 2 minutes. Pour in the chicken broth and water, season with salt and pepper to taste. Bring to a boil and simmer, covered, for 15 minutes. Turn off the heat, add the pecans, and let the rice steam for 10 minutes. Fluff the rice with a fork before serving.
