Grilled Sweet Peppers

Ingredients:

  • 4 red bell peppers, stems and seeds removed, cut in half lengthwise
  • 3 tablespoons olive oil, plus extra for grating the peppers
  • 2 tbsp red wine vinegar
  • 2 tbsp. sliced ​​green onions
  • 2 tbsp. l. chopped parsley
  • 1 teaspoon finely chopped fresh oregano
  • 1/2 tsp salt

Preparation:

  1. Rub the peppers with olive oil. Place on the grill and cook, turning, until softened, 15 minutes. Transfer the peppers to a bowl, cover, and let rest for 10 minutes, then peel off the skins.
  2. In a separate bowl, combine 3 tablespoons of olive oil, wine vinegar, green onions, parsley, oregano, and salt. Pour the mixture over the peppers.
