Ingredients:
- 1/2 cup butter
- 2 eggs
- 1/3 cup sugar
- 1-2 teaspoons of honey
- 2/3 cup premium flour
- 1/2 tsp baking powder
- Zest from 1/2 orange
- Special equipmentMadeleine cookie cutters
Preparation:
- Preheat oven to 200°C.
- To make brown butter: Melt butter in a heavy saucepan over medium heat until it begins to bubble and foam, stirring frequently.
- Once the foam subsides, wait until the butter turns brown at the bottom. Then remove the pan from the heat. The entire browning process will take about 5 minutes. Be careful not to burn the butter.
- In a medium bowl, beat the eggs, sugar, and honey with an electric mixer until the mixture becomes thick and off-white. Add the brown butter and mix well.
- In a small bowl, sift the flour with the baking powder and 1/4 teaspoon of salt. Gently stir into the wet ingredients along with the zest, but only until combined.
- Fill greased Madeleine pans with batter and bake until golden brown, 9 to 11 minutes.
