Ingredients:
- 2 cups of apple juice with pulp
- 1/4 cup brown sugar
- 2 tablespoons freshly squeezed lemon juice
- 1/8 tsp salt
- 3 allspice peas
- 1 cinnamon stick, broken in half
- 1 cm ginger root, peeled and chopped
- Special equipment: 6 (1/3 cup capacity) ice cream molds
Preparation:
- In a medium saucepan, combine the apple juice, sugar, lemon juice, salt, ginger, cinnamon stick, and allspice and bring to a boil over medium heat. Remove from the heat and let simmer for 15 minutes. Then strain the mixture into a measuring cup.
- Pour the mixture into popsicle molds, insert sticks, cover the top and freeze for 6 hours.
- Run the molds under cold running water to release the fruit ice and serve immediately.
