Grilled Pineapple Dessert with Nutella topcook.tomathouse.com
Ingredients:
- 2 pineapples, peeled and cut into 1.5 cm rings, core removed
- 2/3 cup mascarpone cheese, room temperature
- 0.5 tsp vanilla extract
- 2/3 cup chocolate-hazelnut spread (Nutella recommended)
- 6 tablespoons whipping cream
- 3 tbsp chopped roasted hazelnuts
Preparation:
- Preheat an outdoor grill to medium-high heat. If you don't have an outdoor grill, you can use a grill pan over medium-high heat. Lightly oil the grill.
Grill the pineapple rings for about 3 minutes on each side, until golden brown. Don't touch the pineapples during this time, so the grill marks will be visible on the cut side.
- While the pineapple is roasting, combine the mascarpone and vanilla extract in a small bowl.
- In another bowl, combine the chocolate spread and cream. Microwave on full power for 2 minutes, stirring every 20 seconds. Alternatively, combine the chocolate spread and cream in a small saucepan and heat over low heat for 5 minutes, stirring constantly. You should have a smooth, runny chocolate sauce.
- Place the finished pineapple rings on a large plate and drizzle with warm chocolate.
Spoon mascarpone on top, sprinkle with nuts and serve.
