Ingredients:
Chocolate pudding
- 1 3/4 cups prepared chocolate pudding mix, recipe below
- 2 cups of milk
- 2 cups heavy cream
- 1 teaspoon vanillin extract
Dry mix for chocolate pudding
- 85 g cocoa, about 1 tbsp.
- 55 g cornstarch, about 0.5 tbsp.
- 170 g powdered sugar, approximately 1.5 tbsp.
- 55g low-fat dry milk, about 0.5 cups
- 1 teaspoon of salt
Preparation:
- Place 1 3/4 cups of the pudding mixture in a medium saucepan. Add the milk and heavy cream and whisk. Bring the mixture to a boil over medium heat, whisking gently. Reduce the heat to low and simmer for 4 minutes, whisking constantly. Remove the mixture from the heat and stir in the vanilla extract. Strain the mixture through a sieve.
- Pour the pudding into individual serving bowls or a 1000–1500 ml serving dish. Cover the surface of the pudding with cling film. Refrigerate for 4 hours until completely chilled.
Chocolate pudding mix In a large bowl or plastic container with a lid, combine the cocoa, cornstarch, sugar, dry milk powder, and salt. Store in an airtight container for up to a month.
