Spicy Green Beans with Parmesan and Kale topcook.tomathouse.com
Ingredients:
- 3 tbsp. l. olive oil
- 1 onion, sliced into rings
- 110 g of mushrooms, cleaned and cut into quarters (about 14 mushrooms)
- 700 g green beans, stems removed, cut into 2.5 cm pieces
- 2 teaspoons of salt
- 1/2 tsp ground black pepper
- 1/4 cup white wine
- 1/2 tsp red pepper flakes
- 1 bunch (230 g) kale, stems removed, washed, coarsely chopped
- 2 tbsp lemon juice (about 1/2 lemon)
- 3 tablespoons Parmesan, finely grated
Preparation:
- Heat the olive oil in a large, heavy-bottomed saucepan over medium-high heat. Add the onion and sauté until translucent, about 4 minutes. Add the mushrooms, green beans, salt, and pepper and sauté for 2 minutes. Add the wine and continue to sauté for about 5 minutes, until the green beans are tender. Add the red pepper flakes and kale and continue to cook until the kale is wilted, another 4-5 minutes. Stir in the lemon juice and Parmesan cheese. Stir thoroughly and serve immediately.
