Ingredients:
- 1.8 kg peeled potatoes
- 1/2 cup bacon
- 1/2 cup chopped onion
- Salt and ground black pepper
Preparation:
- Bring the potatoes to a boil in a large saucepan of salted water and cook until tender. Do not overcook. Drain and let cool. Slice the potatoes into rounds about 0.5 cm thick.
- In a large, heavy-bottomed cast-iron skillet, render the bacon fat, add the onion and potatoes, and sauté over medium heat until golden brown. Season with salt and pepper to taste.
