Pizza with tomatoes and basil

Ingredients:

  • 2 Roma plum tomatoes, sliced ​​into 0.5 cm thick circles
  • 1 and 1/3 cups grated pasteurized mozzarella
  • 1/4 tbsp. grated parmesan cheese
  • 1 tbsp yellow corn flour
  • 6 tsp olive oil
  • 1 large clove of garlic, minced (optional)
  • 6 fresh basil leaves, plus extra for garnish
  • 1/2 tsp salt
  • 2 servings (225g) homemade or store-bought pizza dough (see recipe below)

    Pizza dough:

  • 1/2 cup warm water (40-43°C)
  • 2 tsp dry yeast
  • 2 cups of wheat flour
  • 1 teaspoon of salt
  • 3 tbsp. l. olive oil

Preparation:

  1. In a small bowl, combine warm water and yeast. Let stand until the yeast dissolves, about 5 minutes. Combine the flour and salt in a food processor. Add the butter. With the processor running, add the yeast mixture and pulse until a dough forms.

    Turn the dough out onto a lightly floured surface and knead until smooth, about a minute. Transfer the dough to a large, greased bowl and turn it over to coat completely.

    Cover the bowl with plastic wrap and let it rest in a warm, draft-free place until the dough has doubled in size, about an hour. Punch down the dough and divide it into 2 equal balls. (The dough can be used immediately or stored in an airtight container in the refrigerator for up to 1 day.)
  2. Position one oven rack in the center and the other on the bottom and preheat to 230°C (430°F). Sprinkle cornmeal on two rimmed baking sheets. Roll each piece of pizza dough into a circle 25-28 cm in diameter. Transfer one crust at a time to the prepared baking sheets.
  3. Drizzle each crust with 2 teaspoons of oil. Sprinkle with mozzarella cheese, spreading it evenly, leaving a 2.5 cm border on each. Arrange tomato slices in a single layer on top of the cheese. Sprinkle with Parmesan cheese. Top with basil leaves, drizzle with a little more olive oil, and sprinkle with garlic.

    Bake the pizzas until the crust is crisp and browned on the bottom and the cheese is melted on top, about 15 minutes. Drizzle each pizza with oil. Sprinkle with basil for garnish and salt. Slice the pizzas into triangles and serve immediately.
