Grilled Halibut with Pineapple Salsa in Pita

Ingredients:

  • 450 gr. thick halibut fillet
  • 2 whole grain pitas
  • 2 teaspoons sea salt
  • 2 tsp crushed black pepper
  • Olive oil
  • 1 tablespoon homemade grill seasoning (see recipe below)
  • Citrus marinade (see recipe below)
  • Red leaf salad (optional)
  • 2 cups cucumber-pineapple salsa (see recipe below)

    Homemade Grill Seasoning:

  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp crushed red pepper flakes
  • 1 tbsp. l. dried parsley
  • 1 tbsp. ground black pepper
  • 1 tbsp. l. seasoned salts

    Marinade:

  • 2 crushed cloves of garlic
  • 2 tablespoons chopped red onion
  • 1 tbsp Dijon mustard
  • 2 tbsp. l. olive oil
  • A little white wine
  • Zest and juice of 1/2 lemon
  • Zest and juice of 1/2 lime
  • Zest and juice of 1/2 orange
  • Salt and ground black pepper

    Cucumber-pineapple salsa:

  • 2 crushed cloves of garlic
  • 1 teaspoon chopped fresh ginger
  • 1/4 cup chopped green onions
  • 1 cup chopped cucumber
  • 1 cup chopped fresh pineapple
  • 2-3 tbsp. l. olive oil
  • 1/4 cup fresh lime juice
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 tablespoons chopped fresh mint leaves
  • A pinch of salt
  • A pinch of ground black pepper

Preparation:

  1. Season the fish on both sides with salt, pepper, and grill seasoning. Place the halibut in the bowl with the marinade and refrigerate for 30 minutes.

    Preheat grill to medium heat.
  2. Remove the fish from the marinade and discard the marinade. Brush the grill with olive oil and sear the fillets until they begin to flake, about 4 minutes per side. Transfer the fish to a plate.
  3. Brush both sides of the pitas with olive oil and grill for 30 seconds per side. Cut the pitas in half to form a crescent shape.
  4. Cut the fish into 4 pieces. If using, fold a lettuce leaf and place it in each pita along with a piece of fish. Top with 1/2 cup of cucumber-orange salsa and serve.

    Homemade Grill Seasoning: Place all ingredients in a bowl and mix. You can use the remaining mixture another time.

    Marinade: In a medium bowl, combine all ingredients.

    Cucumber-pineapple salsa: Place all ingredients in a medium bowl and mix well.
