Ingredients:
Pie:
- 2 cups peeled and chopped apples
- 110g unsalted butter, plus 2 tsp.
- 1.5 cups light brown sugar (tamp down firmly)
- 2 eggs category CO
- 2 cups premium wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 tsp salt
- 1 cup sour cream
- 1 teaspoon natural vanilla extract
Streusel:
- 1/2 cup light brown sugar (packed firmly)
- 1/2 cup premium wheat flour
- 1/2 tsp ground cinnamon
- 4 tablespoons softened unsalted butter
Icing:
- 1/2 cup light brown sugar (packed firmly)
- 1/2 tsp vanilla extract
- 2 tablespoons of water
Preparation:
- Preheat oven to 180°C. Lightly grease a 33x23cm glass baking dish with two teaspoons of butter.
In a large bowl, beat the remaining 110g butter with the brown sugar until light and fluffy. Add the eggs one at a time, beating after each addition.
In a separate bowl or on a sheet of parchment paper, combine the flour, baking soda, cinnamon, and salt. Add to the wet ingredients along with the sour cream and vanilla extract. Stir in the apples. Pour the batter into the prepared pan, spreading it evenly to the edges.
- For streusel: In a bowl, combine the sugar, flour, cinnamon, and butter. Mix until coarse crumbs form. Sprinkle over the top of the pie and bake until golden brown and set, 35-40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
- For the glaze: Combine the sugar, vanilla extract, and water in a bowl and whisk until smooth. Pour the glaze over the cake and let it set slightly. Serve warm.
