Turkey Meatloaf with Feta Cheese and Sun-Dried Tomatoes

Ingredients:

  • 450 gr. ground turkey (dark meat is better)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped sun-dried tomatoes marinated with garlic and herbs
  • Vegetable cooking spray
  • 1/2 cup white bread crumbs
  • 1/3 cup chopped fresh parsley leaves
  • 2 crushed garlic cloves (optional)
  • 2 lightly beaten eggs at room temperature
  • 2 tbsp. milk
  • 1.5 tsp coarse salt
  • 1 teaspoon freshly ground black pepper

Preparation:

  1. Position a rack in the center of the oven. Preheat the oven to 190°C.

    Spray a 9 x 5-inch loaf pan with cooking spray.

    In a large bowl, combine the bread crumbs, parsley, sun-dried tomatoes, garlic (if using), eggs, milk, feta cheese, salt, and pepper. Add the ground beef and mix gently, being careful not to overmix.
  2. Carefully spoon the meat mixture into the prepared pan and bake for about 45 minutes, until the internal temperature of the loaf reaches 165°F (75°C) on a thermometer. Remove the loaf from the oven and let it rest for 5 minutes.
  3. Transfer to a cutting board and cut into slices. Place on a serving platter. Serve with side dish.
