Simple pizza dough topcook.tomathouse.com
Ingredients:
- 2 and 1/4 teaspoons active dry yeast
- 1.5 cups of warm water (about 40°C)
- 3.5 cups of premium wheat flour, plus a little extra for working with the dough
- 2 teaspoons coarse salt
- 1/2 tsp ground white pepper
- A little less than 1 tbsp. honey
- 1 tablespoon extra-virgin olive oil, plus more for greasing the bowl and baking sheets
Preparation:
- In a large bowl, add the yeast to the warm water. Stir until the yeast dissolves and let the mixture sit for 5 minutes.
- Using a sieve, sift half the flour into the yeast and water mixture and knead with your hands until smooth. Add salt, pepper, and honey and mix. Sift the remaining flour and stir into the dough.
- Lightly flour a cutting board or flat surface. Place the pizza dough on the floured surface and knead for 3-5 minutes.
The dough should be smooth and the flour should be completely incorporated. Place the dough in a lightly oiled large bowl.
Cover with cling film and place in a warm place for about 1.5 hours or until doubled in size.
- Gently punch down the dough and turn it out onto a floured surface. Divide the dough into 4 equal pieces, and roll each quarter into a loose ball. Cover with a clean kitchen towel and let the dough rise for another 15 minutes.
Work with each piece of dough separately. Press the ball to form a flat disk and roll it into a 15 cm (6 in) circle. Place each circle on a lightly greased baking sheet.
- How to lay out the filling: If you brush the dough with olive oil, it will act as a kind of barrier, preventing the dough from becoming soggy from the filling.
