Ingredients:
For unsweetened cookies:
- Cooking spray
- 1.75 cups flour
- 1 tbsp and 2 tsp baking powder
- 2.5 tsp sugar
- 0.25 tsp salt
- 3 tablespoons of margarine at room temperature
- 4 tbsp cold unsalted butter, cut into 1cm cubes
- 170 g grated any semi-hard cheese (about 1.25 tbsp.)
- 0.75 cups whole milk
For the garlic oil:
- 3 tbsp (45 g) unsalted butter
- 1 crushed clove of garlic
- 1 teaspoon chopped fresh parsley
Preparation:
- To bake the cookies, preheat the oven to 220°C (425°F). Lightly spray a large baking sheet with cooking spray.
- Make the cookies: Place the flour, baking powder, sugar, and salt in a food processor and pulse to combine. Add the margarine and pulse into the dry ingredients. Add the unsalted butter and pulse into the dry ingredients 4-5 times, or until the butter is broken into pea-sized pieces. Add the cheese and pulse 2-3 times. Pour in the milk and pulse until a moist mixture forms, resembling dough. Turn the dough out onto a clean surface and knead lightly until smooth. Do not overmix the dough, or the cookies will be tough.
- Place the dough on a baking sheet in 0.25 cup portions, 5 cm apart, and bake for 15-20 minutes until golden brown.
- Meanwhile, make the garlic butter: melt the butter and garlic in a small saucepan over medium heat; cook for 1 minute. Then remove from heat and stir in the parsley. Spread the garlic butter over the biscuits and serve warm.
