White Chocolate Mint Sandwich Cookies

Ingredients:

  • 560 g of chopped white chocolate bar
  • 0.5 tsp peppermint extract
  • 30 mint-flavored chocolate sandwich cookies, like Oreos
  • Crushed candy canes, for sprinkling

Preparation:

  1. Mint chocolate glaze


    Bring water to a boil in a shallow saucepan. Place the white chocolate in a heatproof bowl that will cover the saucepan. Turn off the heat and place the bowl over the hot water, making sure the bottom doesn't touch the water to prevent steam from escaping. Add the peppermint extract and stir with a spatula until the chocolate is almost completely melted. Remove the bowl from the saucepan and stir the chocolate until smooth.
  2. Dip the cookies one at a time into the melted icing, then transfer them to a parchment-lined baking sheet. Sprinkle with crushed candy canes. Let the cookies set and dry out before serving.

    Note

    White chocolate is more sensitive to heat than regular chocolate. Melt it gradually at a temperature no higher than 45°C.
