Ingredients:
- 9 cups baby spinach
- 0.5 cup red wine vinegar
- 1/3 cup dried cranberries
- 1.5 tbsp. honey
- 3 tablespoons extra-virgin olive oil
Preparation:
- Place the spinach in a large bowl and set aside. Combine the vinegar, cranberries, and honey in a small saucepan and heat, stirring, until the honey dissolves. Remove from heat and add the butter and a pinch of salt and black pepper.
- Pour the dressing over the spinach and toss until well coated and wilted. Season with salt and pepper to taste.
